Observed caulking missing between the 3 comp sink and wall in the meat area so splashes run along the back wall. Observed the area above the cove basing rusted and separating from the wall. Seal the 3 comp sink to the wall and repair the wall, as needed, to ensure all areas are smooth and easily cleanable. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed the meat market 3 comp sink drain line stored below the flood rim of the floor sink. Observed a small section of flexible hose that was added to the horizontal line to help direct the flow of water directly over the floor sink. Drain lines must be stored 1 inch above the flood rim of floor sinks. Must repair all plumbing to a state of good repair prior to next routine inspection. All plumbing must be maintained in good repair at all times. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed active warewashing at the 3 comp sink with a sanitizer concentration of 0ppm quat sanitizer when measured with a chemical test strip. PIC stated they had not checked the sanitizer concentration today. Observed the chemical test strips damp and with a color change. Food-contact surfaces must be properly sanitized after washing and rinsing (150-400ppm for establishment's quat sanitizer). Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC had the sanitizer dispenser serviced and returned to normal functionality at the time if inspection. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.
