PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. Observed deli made raw pizzas (48-51°F) and keep refrigerated ranch (47-51°F) and blue cheese dressing (48-53°F) in cold holding display case measuring above 41°F. The unit was in defrost at the time temperature measurements were taken and their were large black mats on the base of the unit restricting air flow. When the unit was done with defrosting is measured 40.1°F on the min/max thermometer. Staff stated Time Temperature Control for Safety (TCS) products had been in the unit for over 4 hours and products out of temperature were discarded (see embargo). Staff removed the black mats from the cooler. Discussed cold holding best practices with the manager. Correct By: Corrected At Time Of Inspection

PRIORITY VIOLATION-7-202.12, P: Conditions of Use Observed Quat chemical sanitizer in the three-compartment sink, in the deli, measuring at 500 PPM. Alerted the Person in Charge who has already reached out to EcoLab and their sanitizer vendor. In the meantime, kitchen staff will dilute the sanitizing solution to the appropriate range, with water, until the dispenser is working or they will use one of their two alternate sanitizing dispensers associated with the deli.
