Observed raw eggs (79°F), raw beef (45°F, 48°F, 49°F), cooked beef (66°F, 87°F), cheese (50°F, 53°F), Sour cream dip (55°F), cooked potatoes (60°F), cooked beans (75°F), cooked pork (55°F, 47°F), raw pork (55°F), and cooked chicken (49°F, 66°F) all reporting above 41°F in unit reach in refrigerator. Refrigerator reported at 64°F inside. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Cooks had left for the day, and could confirm how long the items were in the unit. Cooks would not return until next day. All TCS foods improperly cold held were enbargoed at time of inspection.
