Observed new packages of shredded cheese and cream cheese in unit fridge holding at 50°F. Fridge was observed holding at 48°F minimum at time inspection. Fridge items were moved into containers packed with ice while unit was serviced by on site mechanics. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Unit refrigerator was serviced on site and returned to 41°F and below at time of inspection. Corrective Action: Corrected at time of inspection.
