Inspector's notes

Observed raw chorizo (65°F), shredded cheese (65°F), cut tomato (64°F), cooked potato fries, (63°F), raw eggs (60°F), and sliced deli ham (74°F) all holding above 41°F, and cooked beans in fridge cooling from hot at 100°F. All TCS foods improperly cold held were embargoed by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Fridge was holding at 65°F at start of inspection, but prior to service had cooled down after removal of food to 41°F. Corrective Action: Corrected at time of inspection.
