Inspector's notes

Observed cooked peppers with an internal temperature of 124*F under no temperature control. Per employee the peppers were cooked just prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Employee reheated the peppers to 165*F for 15 seconds before placing it on the flat top to hot hold. Corrective Action: Corrected at time of inspection.
