Observed employee rinsing off soiled dishes, running them through the mechanical dishwasher, then removing their dish washing gloves and putting away the clean dishes. No handwashing observed between handling dirty and clean/sanitized dishes.

Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff a policy issue, which resulted in the violation. Corrective Action: Corrected at time of inspection.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC discarded all TCS foods in the glass door reach in refrigerator at time of inspection. The TCS foods in the salad station were moved to other cold holding equipment at time of inspection to rapidly cool. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff a policy issue, which resulted in the violation.
