Observed dish washer employee handling and rinsing dirty pans with sprayer near the dish machine. Then without first washing their hands observed the dish washer employee handle and put away clean pans that were sanitized in the mechanical dish machine. Observed chef near the grill touch their face. Then without first washing their hands observed the chef open a prep fridge, handle packaged tortillas, and touch clean bowls.

In reach in refrigerator near the expo station observed salsas/52°F and fruit salad(cut melon)/53°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Ambient temperature observed at 53.4°F with inspector's min/max thermometer. Onsite service call made by the PIC at time of inspection. According to the PIC all TCS foods were within safe time parameters.
