Inspector's notes
Observed spinach + cheese/66°F, ham + cheese/67°F, and cheese pastries/66°F in glass display. Observed hummus pack/53°F, packaged cheeses/50°F, pasta salad/50°F, roast beef sandwiches/51°F, packaged cottage cheese/50°F, chicken Caesar salad/50°F in the grab and go display. Observed heavy cream/47°F in the milk carafe on the counter. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined the pastries were placed in the display around 8AM (4+ hours). After discussion with the person in charge, it was determined all other TCS foods were placed in the grab and go display and carafe less than 4 hours ago. The pastries were discarded by PIC at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed utilizing 4 hour time as a public health control for dairy carafes. Service call made at time of inspection for grab and go display refrigerator observed with ambient temperature of 45.7°F with inspector's min/max thermometer. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff a policy issue, which resulted in the violation. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

Thermometer display not functioning and no visible thermometer in the glass pastry display refrigerator used to store TCS pastries. A temperature measuring device is required in cold holding equipment used for storing TCS foods. Obtain thermometer prior to the next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed upright cooler that contained TCS items including butter pats and cream cheese packs. The ambient temperature measured with inspector min/max thermometer measured 51*F. The person in charge stated that the butter and cheese had just been moved into the cooler. The product measured 48*F. The person in charge had staff remove product and put in other cooler at time of inspection. Discussed with the person in charge that the cooler should be maintained at 41*F or below when cold holding TCS items. Corrective Action: Corrected at time of inspection.

Observed excessive organic mater build up on the upper inner portion of the ice machine. Discussed with the person inn charge that the cleaning frequency should be increased to preclude the accumulation of soil and mold. Corrective Action: Correct prior to next routine inspection.
