Inspector's notes
Observed a bartender place a lime wedge on the rim of a beverage for service with their bare hands. Establishment does not utilize bare hand contact variance at this time. Handwash counts per man hour worked are not tracked or recorded. Person in charge instructed bartended to discard the lime wedge. Bare hand contact with ready-to-eat foods can contribute to the transmission of foodborne illness. Discussed utilizing utensils or single use gloves when handling ready to eat foods with the person in charge. Corrective Action: Corrected at time of inspection.
