Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge it was determined the mac and cheese sauce had been hot holding for an hour. Predefined Comment: All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

After discussion with the person in charge it was determined the stock was frozen on 11/10, but it could not be determined exactly how long ago it was thawed and held under refrigeration. After initial heating, but prior to complete cooking, non-continuous/partial cooked foods shall be marked or otherwise identified as foods that must be fully cooked. Instructed manager on the importance of separating partially cooked and ready to eat foods in walk in cooler. The chicken was labeled as non-continuous/partial cook at time of inspection. In the walk-in cooler near the office observed a large container of pickled vegetables made in house (broccoli, cauliflower, bell peppers) with a 5/15/25 date mark. After discussion with the person in charge it was determined that the pickling solution is heated, combined with the raw vegetables, and then cooled. Once a non-TCS food (i.e. vegetable) is cooked or heated above room temperature, then it becomes a TCS food.
