Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge it was determined the sausages were in the display since 11AM. PIC voluntarily discarded the sausages at time of inspection. According to the PIC all hot held foods are held for lunch service from 11AM-3PM. Discussed utilizing 4 hour Time as a public health control rather than temperature control/ hot holding. Provided guidance document electronically. Corrective Action: Corrected at time of inspection.

After discussion with person in charge it was determined all TCS were within safe time parameters. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed a large mobile hot holding cabinet stored directly in front of the handwashing sink on the line so the sink was not immediately accessible. The mobile hot holding unit needed to be moved completely from the area to access the hand washing sink. All handwashing sinks shall be maintained so they are accessible at all times. The mobile hot holding cabinet was moved so the handwashing sink was accessible at time of inspection. Discussed the importance of handwashing sink accessibility with staff.
