Inspector's notes
In the open-air display refrigerator observed packaged chicken salads/50°F, turkey wraps/ 48°F, chicken sandwiches/50°F, bacon egg bites/ 51°F, tomato egg bites/ 50°F, yogurts/50°F, snack packs (assorted cheeses)/52-56°F, and cream cheese/ 51°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After discussion with the person in charge it was determined all TCS food had been in the display refrigerator since 9 AM (4+ hours prior). All TCS foods improperly cold held were discarded by PIC at time of inspection. Observed minimum temperature of open air refrigerator at 48.2°F with inspector's min/max thermometer. Person in charge agreed to discontinue storage of TCS foods in the open air refrigerator until it maintains TCS foods at 41°F. PIC made service request at time of inspection. Corrective Action: Corrected at time of inspection.

In the display cooler observed chicken sandwiches/ 54°F, chicken Caeser salads/ 55°F, and turkey wraps/ 54°F, and yogurt/54*F. Except during preparation, cooking, cooling, or when time is used as a control all TCS food shall be maintained at 41°F or less. After discussion with the person in charge it was determined that all TCS foods had been in the cooler since 6:00AM. All Time/temperature controlled for safety (TCS) foods were moved to the kitchen’s walk-in cooler at time of inspection to rapidly cool. Ambient temperature of the display cooler measured at 58.2°F with min/max thermometer. Display cooler shall not be used to store TCS foods until the unit is repaired and maintains 41°F or less.
