At Sonoran Landing bar observed ice well filled with ice for human consumption with no cover/ protection from environmental contaminants. Discussed obtaining stainless steel sliding covers for ice wells with the PIC to protect ice from environmental sources of contamination. Ice for human consumption must be protected from environmental sources of contamination. Obtain and utilize ice covers for ALL outdoor bar ice wells. Observed in use low temperature chlorine dish machine at Sonoran Landing Bar. Final rinse chlorine concentration measured at 0 PPM. Upon further inspection it was determined quaternary ammonium sanitizer was attached to the dish machine rather than chlorine. The quaternary ammonium sanitizer was changed out for chlorine sanitizer at time of inspection.

Predefined Comment: Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

Discussed submitting minor remodel application if changing the low temperature dishmachine to high temperature dish machine (different types). Like for like replacements would not require a minor remodel application. Corrective Action: Correct prior to next routine inspection.
