Inspector's notes

Observed cooked chicken/ 74°F and raw ground beef/ 71°F stored in a malfunctioning drawer cooler below the grill. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. According to the person in charge (PIC) the cooked chicken and raw beef had been stored in the drawer cooler for approximately 30 minutes. The chicken and beef were voluntarily discarded at time of inspection. Upon further inspection it was determined the circuit breaker had tripped on the cooler and was not turned on. The circuit was reset, and the drawer cooler turned back on. Internal minimum temperature of the cooler measured at 74.6°F. Establishment will discontinue use of drawer cooler until it maintains 41°F or less. Corrective Action: Corrected at time of inspection.

At time of inspection observed raw salmon/ 50°F, cooked chicken/ 47°F, and pico de gallo/47°F in prep cooler across from the grill. Internal temperature of the prep cooler measured at 56.7°F with min/max thermometer. Except during preparation, cooking, cooling, or when time is used as a control all Time/Temperature Control for Safety (TCS) food shall be maintained at 41°F or less. All TCS foods were within a safe time parameters and were placed in ice baths or moved to the walk in cooler at time of inspection to rapidly cool. Maintenance began service on the prep cooler at time of time of inspection. Discontinue storage of TCS foods in the prep cooler until it is repaired and maintains 41°F or less.
