Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. After discussion with the person in charge it was determined the pasta had been cooling for an hour. Predefined Comment: All TCS foods cooling were uncovered to allow for rapid cooling. Predefined Comment: When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. After the person in charge discontinued washing dishes and made adjustments, the dish machine was run again and maximum surface temperature measured at 164°F. Predefined Comment: Food-contact surfaces were properly sanitized at time of inspection. Ensure food surface temperatures in the high temperature dish machine maintain at least 160°F at all times during use. Corrective Action: Corrected at time of inspection.

Observed multiple containers of beef short ribs and stock over 6 inches deep cooling in the walk in cooler. Internal temperature of the beef short ribs and stock was 55F. After discussion with the person in charge, it was determined that the short ribs and stock had been cooling for approximately 3 hours. Discussed cooling methods with the person in charge. The beef short ribs were removed from the stock and placed on sheet trays to rapidly cool in the walk in cooler. The stock was voluntarily discarded. Correct By: Corrected At Time Of Inspection
