Observed in use high temperature dish machine with a maximum utensil surface temperature at 155.1ºF. The maximum utensil surface temperature measured at 151.3 ºF after running the dish machine a second time. The maximum utensil surface temperature measured at 156.9 ºF after running the dish machine a third time. Surface temperatures of utensils passing through ware washing machines using hot water for sanitizing shall reach at least 160ºF. Service call was made at time of inspection and dish machine. Dish machine was serviced and the maximum utensil surface temperature measured at 165.6 ºF on the final rinse. Discussed verifying maximum utensil surface temperature using min/max thermometer or plate thermometer with the person in charge. Dishware was rewashed at time of inspection. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. At time of inspection observed chopped lettuce/54°F, sliced tomatoes/52°F, and coleslaw/ 50°F in the prep cooler near the pizza station. Except during preparation, cooking, cooling, or when time is used as a control all Time/Temperature Control for Safety (TCS) food shall be maintained at 41°F or less. After discussion with the chefs it was determined TCS foods were within safe parameters. TCS foods were moved to ice baths at time of inspection to rapidly cool. Internal temperature of the the prep cooler measured at 49.2°F with min/max thermometer. Service call made at time of inspection. Establishment will discontinue use of prep cooler until it maintains 41°F of less. Correct By: Corrected At Time Of Inspection
