Observed the low temp dish machine not in use at time of inspection. After running the dish machine two times, the chlorine concentration measured at 0 PPM each time. Acceptable chlorine concentration shall measure between 50-100 PPM. Establishment will utilize the three-compartment sink or dish machines in the kitchen to wash, rinse, and sanitize equipment, utensils, and food contact surfaces until the dish machine is repaired and maintains a chlorine concentration between 50-100 PPM. Observed ice buildup in the back of the beverage reach in refrigerator. Non-TCS foods such as citrus and bottled beverages like champagne and lemonade observed in the refrigerator. Ensure equipment is maintained in in a state of good repair and condition. Corrective Action: Correct prior to the next routine inspection. Repeat Violation: 4th.

The person in charge replaced the chlorine sanitizer at time of inspection and the chlorine concentration was retested at 50 PPM. Ensure spa staff is monitoring chlorine concentration with chlorine sanitizer test strips. Corrective Action: Corrected at time of inspection. Repeat Violation: 3rd.
