PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined the milk was in the reach in refrigerator since yesterday. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. Observed refrigerator’s minimum temperature at 47.8°F with inspector’s min/max thermometer. The refrigerator temperature was turned down and foods blocking the fans were moved by the person in charge. After the adjustments were made minimum temperature of 34.7°F was observed. Ensure all cold holding equipment maintains TCS foods at 41°F or less. Corrective Action: Corrected at time of inspection.
