In the upper section of the prep refrigerator across from the flat top grill observed sliced tomatoes/50°F and sliced cheeses/49°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined all TCS foods were within safe time parameters.

Observed low temperature chorine dish machine washing dishes at time of inspection Observed final rinse chlorine sanitizer concentration of 0 PPM. The dish machine was run again and the final rinse chlorine sanitizer concentration measured at 0 PPM. Chlorine concentration shall measure between 50-100 PPM. The person in charge made a service call at time of inspection. Person in charge agreed to sanitize food contact surfaces in the three-compartment sink until the dish machine is repaired and chlorine concentration measures between 50-100 PPM. Corrective Action: Corrected at time of inspection.

Observed multiple unlined copper mule mugs at the bar. Copper and copper alloys such as brass may not be used in contact with a food that has a pH below 6 such as vinegar, fruit juice, or wine. Copper is not approved for use in certain alcoholic beverages. When copper and copper alloy surfaces contact acidic foods and juices, copper may be leached into the food product. PIC removed the mule mugs from the bar at time of inspection. Discussed utilizing mule mugs with stainless steel lining. Corrective Action: Corrected at time of inspection.

At time of inspection observed a small container of chicken stored below a food warmer. Internal temperature of chicken was measured at 105°F. Except during preparation, cooking, cooling, or when time is used as a control all TCS food shall be maintained at 135°F or higher. According to the chef, the chicken is reheated to 165°F prior to service. Time of preparation was known, and establishment will utilize 4-hour time as control temporarily for the small container of chicken. Discard time labeled at time of inspection. Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Observed three compartments sink at the bar that utilizes Quat sanitizer not in use at time of inspection. The Quat sanitizer measured at 0 PPM when tested. It was determined that the sanitizer jug was empty at time of inspection. The sanitizer was restocked at time of inspection and re-tested at 200 PPM.
