#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed open deli chubs of ham and turkey with internal temperatures as measured using a probe thermometer of 50°F inside of a deli meats and cheeses display case. A min-max thermometer was placed into the unit and allowed to stabilize for 10 minutes. The ambient air temperature in the unit was 50°F. According to the person in charge, the deli chubs had been in the unit for less than 4 hours and were moved to the walk-in cooler to rapidly chill down to 41°F. Discussed with person in charge to have a service technician fix the unit and to keep deli meats in the walk-in cooler until repaired. The establishment has sufficient cold holding capacity to maintain safe operation. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

This address holds 8 food permits

Maricopa County issues a separate permit for each kitchen rather than for each restaurant name, so large properties hold several. Each is inspected and scored on its own. The county does not publish which kitchen serves which venue.
