Observed dishes stored at the clean dishes rack that had observable stickers and glue residue stuck to the outside of the pans. Also observed a few other pans with dried food residue stuck on them. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. Inspector's notes

Observed a large, heated container of corn champurrado with an internal temperature as measured using a probe thermometer of 105°F. According to the person in charge, the champurrado had been there for more than 2 hours and was embargoed at time of inspection (see embargo form). Upon closer observation, it was observed that the unit had become unplugged at some point and wasn't noticed. The unit was plugged back in. Observed roasted chicken wings and roasted jalapenos in a hot holding display case with internal temperatures as measured using a probe thermometer ranging from 105°F - 125°F. According to the person in charge, the chicken and jalapenos had been cooked and placed into the unit more than 2 hours from the temperature assessment. The chicken and jalapenos were embargoed at time of inspection (see embargo form). Other foods in the hot case had an internal temperature of at least 135°F or above. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Discussed with PIC that cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling.
