Inspector's notes

Observed an employee washing a heavily soiled knife in a handwashing sink with soap and a sponge. Discussed with person in charge that handwashing sink is to be used for handwashing only. PIC directed the employee to finish washing the knife at the 3-compartment sink. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed several dishes that were stored as clean at the clean dishes rack according to the person in charge. Upon closer observation of the dishes, several dishes were observed to still have dried dough or food residues stuck to them as well as oily/greasy residues on the dishes. The dishes in questions were taken to the 3-compartment sink to be washed, rinsed and sanitized at time of inspection. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Observed quat sanitizer at the 3-compartment sink that was testing well above the 150-400 parts per million concentration as indicated by the testing strips. Sanitizer was diluted by PIC to approved levels at time of inspection. Discussed with person in charge to dilute the sanitizer solution with cool water in the meantime and to reach out to a tech to adjust the sanitizer dispenser. The person in charge reached out to a tech to adjust their sanitizer dispenser. Corrective Action: Corrected at time of inspection.
