No paper towels or alternate drying provision available at hand sink at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC requested hand drying provision for handwash sink from commissary staff at time of inspection. Until then, clean rags were available on unit. Corrective Action: Corrected at time of inspection.

Observed various items above proper holding temperature, including thawed frozen potato fries (43°F, 62°F, 80°F), mini chimichangas filled with meat and cheese (86°F), cooked al pastor (95°F), raw beef (53°F), cooked chicken patties (48°F), cooked corndogs (81°F), cooked beef (93°F), cooked eggs (82°F), cooked rice (90°F), and shredded cheese (56°F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Fridge was observed to be off at start of inspection, and no employees were on the unit. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were embargoed by PIC at time of inspection.

Inadequate amount of refrigeration for the amount of TCS food on premises. Food items embargoed at time of inspection. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items.
