Observed the only refrigeration unit with an ambient air temperature of 67 degrees. Informed PIC that cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A mechanic was on site and repaired the unit. The unit has been returned to proper working condition and is now able to maintain TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed various items holding above holding temperature in refrigerator, including cooked beef (83°F), cooked beans(71°F), cooked chicken(75°F), and queso (79°F), shredded lettuce (61°F), thawed frozen potato fries (55°F), shredded mozzarella (76°F), thawed frozen chicken patties (60°F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Refrigerator had been temporarily turned off for less than 15 minutes while operator was addressing other truck maintenance, and at beginning of inspection was reading at 60°F near the door and 55°F towards the rear. After turning the fridge back on, it was able to cool back to 41 degrees within 30 minutes. Beef, beans, chicken, and queso had been placed in the refrigerator within the past 2 hours and were packed with ice until they reached 41°F or below. Fries, shredded cheese, shredded lettuce, and chicken patties had been in the unit since that morning and were discarded at time of inspection. Corrective Action: Corrected at time of inspection.
