Observed chlorine bleach sanitizer in 3-compartment sink with dishes reading well below (little to no color change) required concentration as well as too high concentration (black color) for a sanitizer bucket intended for food surfaces located on the floor of the unit. Discussed the importance of proper sanitizer levels between 50-100PPM and proper monitoring of sanitizer levels. PIC added chlorine bleach to 3-compartment sanitizer sink and watered down sanitizer bucket to satisfy concentration requirements. Corrective Action: Corrected at time of inspection.

Observed shredded lettuce reading 63°F, pico de gallo reading 55°F, and shredded cheese reading 51°F in refrigerator below prep station. Per PIC, foods were placed in cold holding about one hour (10:40am) before inspection occured. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After being placed in an ice bath to rapidly cool, temperatures were 51°F for shredded lettuce, 43 °F for pico de gallo, and 44°F for shredded cheese, indicating that temperatures were falling toward or within required temperature for cold holding. Corrective Action: Corrected at time of inspection.
