SECOND CONSECUTIVE. Observed baking sheets and speed racks with a crusted black matter buildup on their surfaces. Staff to continue deep cleaning the baking sheets and speed racks to remove blackened organic matter at frequent and regular intervals. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection.

No County legal action will result from this inspection.A work order on the high temperature dish machine had already been placed before EHS was onsite. The store manager stated they were waiting on parts. Discussed the importance of storing the dish machine as clean until it can be fully repaired.
Inspector's notes
Observed the automatic chemical dispenser on the three-compartment sink measuring less than 150 PPM of quat. Staff stated no dishes had been washed, rinsed, and sanitized in the three-compartment sink today. Wiping buckets and sanitizer to be hand-dosed until the automatic chemical dispenser can dispense sanitizer in the correct range (150-400 PPM). Alternatively, bakery staff are to use the meat department's three-compartment sink to wash dishes and obtain wiping buckets until their equipment is repaired. The manager placed a work order on the automatic chemical dispenser while EHS was onsite. Corrective Action: Corrected at time of inspection.
