Observed an accumulation of an organic substance and debris on the plastic surfaces inside the chute of the ice maker. Person in charge (PIC), unsure of how often the ice machine is emptied and washed. Discussed increasing the frequency of cleaning the ice maker. Equipment shall be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Corrective Action: Correct prior to next routine inspection.

The presence of insects, rodents, and other pests shall be controlled to eliminate their presence by routinely inspecting incoming shipments of FOOD and supplies, routinely inspecting the PREMISES for evidence of pests and eliminating harborage conditions. Discussed cleaning the area to remove soil accumulations and provide pest control record. Corrective Action: Correct prior to re-inspection.
