Observed both freezers at the stand labeled "out of order" and not in use. Foods that are received frozen, must remain frozen until thawing/cooking. Repair the freezer units prior to next routine inspection. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed hermetically sealed packages of raw hotdogs stored above container of jalapenos in standing reach-in. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Person in charge (PIC) properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed hot dogs at 99*F in front hot holding trays near registers. Per PIC, hotdogs are under time as a public health control. Observed time as a control logs with stated products under policy without a time stamp. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Discussed separating hot dogs under different prep times with PIC to ensure older hot dogs are first to be used. Corrective Action: Corrected at time of inspection.
