Inspector's notes

Observed dark organic matter in the inside of the soda nozzles on both of the machines in use. Informed PIC that the nozzles need to be cleaned and continue to be cleaned at a rate which precludes the growth of organic matter. Discussed with PIC and employee that the nozzles need to go through a wash, rinse, and sanitize steps and suggested that they use a brush of the insides. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection.

Requested the person in charge (PIC) provide paper towels at the time of inspection. Ensure hand sinks are fully operational with soap, paper towels, and hot running water at all times. The PIC stated the items were just placed in the cooler approximately an hour prior to the inspection. At the time of inspection, the beef and pico was placed in another refrigerated unit to rapidly cool. Ensure TCS foods are maintained at 41°F or below when cold holding. All TCS items were removed from the unit at the time of inspection. Recommended using refrigerator for non-TCS items until unit can be repaired.
